Ingredients

Eggs 8 large
Italian sausage 200 g
Mushrooms 150 g
Provolone cheese 60 g
Onion 0.5 medium
Olive oil 1 tbsp
Fresh basil 4 leaves

How to make it

  1. 1 Brown sausage in an oven-safe skillet. Add sliced mushrooms and onion, cook 4 minutes.
  2. 2 Whisk eggs with salt and pepper. Pour over sausage mixture.
  3. 3 Top with sliced provolone.
  4. 4 Cook on stovetop 3 minutes, then transfer to oven at 190°C for 10 minutes.
  5. 5 Garnish with fresh basil. Slice into wedges.
