Ingredients
Eggs 4 large
Canned tomatoes 400 g
Bell pepper 1 medium
Onion 1 medium
Garlic 3 cloves
Cumin 1 tsp
Paprika 1 tsp
Olive oil 2 tbsp
Fresh parsley 2 tbsp
How to make it
- 1 Heat olive oil in a skillet. Sauté diced onion and bell pepper for 5 minutes.
- 2 Add garlic, cumin, and paprika. Cook for 1 minute.
- 3 Pour in canned tomatoes and simmer for 10 minutes until thickened.
- 4 Make 4 wells in the sauce and crack an egg into each.
- 5 Cover and cook for 5-7 minutes until eggs are set.
- 6 Garnish with parsley and serve with bread.
